A simple preparation that preserves the natural tenderness of madai (red sea bream), a fish in Japan linked to celebration and good luck.
It is layered with scallop mousse and wrapped in nori, adding a light taste of the sea.
At the centre is yellow chilli, known in South America for its floral aroma and gentle warmth. It is blended into a butter sauce with fish roe for a soft, fragrant heat and finished with white kombu.

PAVLOVA — Our Chilean take on a classic.
Chirimoya alegre, the traditional Chilean blend of cherimoya (an emblematic fruit of the Andean region often considered the ‘fruit of the gods’) and orange, sits at the heart of the dish. It adds fresh, bright sweetness with a gentle tang.
Crisp meringue, orange mousse and mascarpone cream layer together in balance. Sweet, tangy and soft, each bite is rounded out by the natural creaminess of cherimoya.
The meringue is shaped like delicate leaves and finished with edible flowers, it’s an elegant, refined version of a timeless dessert.
