CORAL — A vegetarian expression inspired by Chile’s rugged and forested coastline.
Celebrating native South American ingredients, CORAL is a refined composition of earthy, herbal and coastal flavours. A delicate purple corn lattice is layered with sea greens and huacatay, the aromatic herb of the Andes, while mashua, an ancient Andean root vegetable, is transformed into a light espuma. Finished with crunchy quinoa and pickled seaweed, the dish is savoury, delicately saline and quietly expressive.
