Chef Simone Loisi grew up on Nunzia’s pasta. Now it’s our turn.
In Bari Vecchia, Nunzia La Pastaia has spent decades shaping orecchiette by hand, carrying on a craft passed down through generations.
This coming October, she’s bringing the sun-soaked heel of Italy to Publico, with handmade pasta and Puglian cooking by the Singapore River.

Long before restaurant kitchens, Simone knew food as a full house, plenty of chatter and always enough to go around.
Brothers and sisters talking over one another. His mother’s ragù on the stove since morning. More food than anyone reasonably needed.
That’s where our new Executive Chef learnt the important part: cooking is one thing. Feeding people is another.

To get to Nanson Road Level, you can take the MRT to Fort Canning station and walk towards River Valley Road. Alternatively, you can take the bus and alight at the bus stop along Zion Road. If driving, take River Valley Road towards Zion Road and turn into Nanson Road. There are open-air car parks available in the vicinity for parking.
