At Kaarla we run a clean, hot hardwood fire so smoke stays bright, not bitter. Radiant heat builds a deep golden crust that keeps the juices in; the moving smoke adds that unmistakable “off-the-grill” aroma you recognise.
Rendered fats drip, vapourise, and return to the meat as savoury sweetness. We move each cut through zones—kiss of flame for char, farther off for gentle roast—to balance bark and blush.
