Golden and radiant, the kumquat is a citrus long treasured for its balance of brightness, bitterness, and quiet depth.
Each year, before preparing our Golden Kumquat Pound Cake, we select kumquats at their peak, when sweetness and gentle bitterness are in harmony and the skins are most fragrant. Patiently steeped over time, with select batches matured for over a year, the fruit is infused in shochu to soften the bite and draw out natural citrus oils, before being imbibed, glazed, and baked into a moist, tender loaf. Finished with candied orange slivers, each slice offers a measured citrus lift and lingering aroma.
