We're thrilled to have from Lost Origin Coffee Lab with us next week, for two special sessions.
is a processing facility based in Panama City, exploring how controlled fermentation can unlock new expressions of coffee. Inspired by craft beer brewing, they work closely with coffee producers in Boquete and Volcan to design precise processing methods, using custom-built stainless steel tanks and selected yeast and bacteria strains to guide flavour development.
1) Cupping & Sharing
Franz will showcase curated lots of Lost Origin's 2026 harvest and share more about the producers and processing methods behind each coffee. This session is open to all roasters, green buyers, and coffee professionals.

Our newest coffee from is a limited release Janson X Gesha.
This lot 519 went through a 72 hour anaerobic natural fermentation, then dried in the Janson X dryer with a 44 day resting period in between drying, with a total drying of 60 days. The Janson X process involves drying at cooler temperatures and controlled humidity in a dark room with cutom-built dehydrators. They aim to have precise control over a key part of coffee processing and achieving the fullest potential of the coffee.
We love this coffee for it's sweetness and syrupy mouthfeel, reminding us of cherry liqueur, blackberry, and an elegant red wine finish.

Our first ever release from Finca Sophia. This is a special release for us, to have the opportunity to share two exceptional geshas from one of Panama’s most established producers:
• Estacion Natural FSA-11 (Finca Sophia Private Auction 2025)
This natural processed gesha reminds us of juicy and elegant fruits such as strawberry, golden kiwi, white peach and lychee, followed by aromatic florals like lavender and rose.
• Grand Reserve Gesha (Washed)
This washed processed gesha is juicy and sweet, reminding us of mango, mandarin and apricot, followed by a long jasmine and bergamot finish.
Now available in limited portions for retail (single dose), and on our brew bar at .coffee. We can’t wait to share these amazing coffees with you.

To those who joined us at the seminars at , stopped by the brew bar takeover at .coffee, and connected with us over coffee, we're grateful for your time and great energy. It was incredible to share La Joya's latest research and harvest with our home community.
We loved meeting everyone, cupping together, and diving deep into conversations about soil, fermentation, and everything in between.
