As part of our Pinnacle Series, we look towards coffees that represent something exceptional, not only in the cup, but in where they come from and the work behind them.

This release takes us to Jardines del Eden, a farm that continues to push what’s possible through a considered approach to cultivation, processing and flavour.

Inside the bag is a coffee shaped by that attention to detail, from the way it is grown and processed at origin to how we approach it at the roastery.

These are some of the people, places and processes behind the coffee.

Jardines del Eden, as part of our Pinnacle Series.

Once the coffee has rested, the team gathers around the cupping table to find out. We taste, compare notes and challenge one another’s observations, all with the goal of understanding the coffee more deeply.

Has the sweetness developed the way we hoped? Is the acidity balanced? Does it express the qualities that made us choose it in the first place?

No two palates are the same, and that’s exactly why we cup together. Every perspective helps us make better decisions, from refining a roast profile to deciding whether a coffee is ready to be shared.

For us, cupping isn’t just quality control.

It’s how we make sure every coffee leaves the roastery as the best expression of itself.

Something’s been brewing.

We’ve been quietly working away on a project we’re genuinely excited about, taking our time to get every detail right before sharing it with everyone.

For now, we’ll leave you with this photo of Aslam working in the dark. (Literally)

Every coffee we release begins here.

Before a coffee finds its way onto our shelves or into your cup, the team gathers around the cupping table. Not to decide whether it’s good or bad, but to understand it.

Cupping gives us a shared language. We taste the coffees side by side, paying attention to sweetness, acidity, body, balance, and how each coffee changes as it cools. It’s where we learn what makes each lot unique, and how best to roast and brew it.

It also keeps us honest. Every member of the team tastes the same coffees, compares notes, asks questions, and challenges assumptions. The goal isn’t consensus for the sake of it, but clarity.

A lot of what happens at the cupping table will never be seen. But it’s one of the most important parts of what we do.

Because every release deserves more than a quick taste.

It deserves our full attention.

There’s something beautiful about a room full of green coffee.

Not because of the quantity, but because every sack represents a different producer, a different harvest, and a different part of the world. Together, they’re a reminder that roasting begins with sourcing—finding remarkable coffees and preserving everything that makes them unique.

Good coffee is a story of many hands.

From the careful picking of ripe cherries in Nyamasheke to the final brew in your cup, every step shapes the flavour.Mahembe Gituntu is produced by Mahembe, a family-owned company founded by Justin Musabyimana in 2010. After the 1994 Genocide against the Tutsi, Justin returned to his hometown with a vision: to invest in his community by building a washing station on his father’s coffee farm. Today, alongside his own 10-hectare farm, he works with surrounding smallholder farmers, purchasing their cherries and continually raising quality through thoughtful processing and collaboration. That dedication is reflected in every cup. Expect notes of red grapes, fresh berries and floral honey, carried by a lively, silky finish.

Ever wondered why coffee people spend so much time slurping?

This time, we’re sitting down with the team to talk about cupping: what it is, why we do it and how we approach it

We sat down with Aslam to talk about what cupping really is, why it matters, how they approach it, and the little things that make a huge difference.
