After 2 years of not able to host private dinners, it was a great pleasure to be able to serve a group of ex-saints(St Andrews) for a long awaited dinner of 10 pax .
Afraid that we were abit rusty with our skills and culinary touch but everyone was satiated with our 6 course degustation line up.

Designing how a dish looks like, takes time and planning ahead of time. I often do pencil sketches, very messy but only legible to me! I do admit that I start with imagining the plating design first before conceptualising the flavours and composition of the dish... donโt think many chefs do that though! ๐

3 years ago, I had the best pizza, not in Naples, not in Rome but in Tokyo, Japan. I could only see the skepticism, doubtful looks on my friends faces when I told them about my experience excitedly. I just shrugged it off, thinking โif only they took a bite of that light, airy and flavourful pizza crust, they wonโt never see Dominoes and Pizza Hut the same way againโ
So, I went on a 3 year quest to find a neopolitan pizza dough recipe that could match what I ate in seirinkan. And I think I might have just found something pretty pretty close to it๐
After 300 failed pizzas, burnt, bland and failing and not giving up, I felt a readiness to share it with more people and hence, came about! ( of course, the effects of Covid did push me to start this earlier than I expected I would)
