There are dishes you cook.
And then there are dishes you defend.

At Bacaro, Carbonara is not a trend. It’s a position.

Just guanciale slowly rendered until crisp and fragrant, golden yolks folded with aged Pecorino Romano, and pasta tossed at the exact moment when heat turns simplicity into silk.

It’s Roman. It’s unapologetic. It’s honest.

We don’t reinterpret tradition.
We respect it — and let the ingredients speak in their own accent.

Did you know that the Barolo DOCG area includes 181 officially recognized vineyard sites (crus) across its 11 historic communes? Each cru reflects a unique patch of soil, exposure, and character in one of Italy’s most legendary wine regions.

There are roughly 750 producers of Barolo, each crafting their own expression of Nebbiolo from these special sites — but there’s one cru that stands truly alone… 🏔️

✨ Barolo Cru Pugnane — a singular expression of Nebbiolo grown and bottled only by one producer: Cascina Pugnane.
From this tiny cru, they make about 2,500 bottles of Barolo Pugnane each year — a rare and very limited wine that speaks clearly of its hillside home.

🍾 From February 25, this incredible Barolo will be available at Bacaro — and we are the only place in Singapore where you can taste and purchase it.

Join us in celebrating rare terroir and small-batch excellence.

Next week our friend Claudio Mo from Cascina Carlot is coming to visit us.
We thought we’d welcome him with two intimate tasting nights for our wine circle and a few close customers… and instead, we were completely overwhelmed by reservations with 90 pax attending in the 2 nights.

We’re not usually the type to show off our small wins, but this one makes us genuinely proud — of Claudio, of his wines, and of the incredible community around us.

It’s going to be one big celebration 🍷✨

From the calli to the bacaro counter, Venetian fried meatballs have always been more than just food.

Born as a way to avoid waste, polpette were made with what was available: leftover meat, parmigiano, herbs, a touch of spice. At Bacaro we use pork collar, beef brisket, veggies, parmigiano. Fried until golden, they became the perfect cichetto — small, comforting, meant to be eaten standing up, with a glass of wine in hand.

In Venice, polpette are memory food. Simple, generous, deeply human.
Crispy outside, soft inside — made to be shared, or not.

Dear friends,

As the year comes to an end, we would like to sincerely thank everyone who has visited Bacaro — even just once. Every presence, every shared moment at our tables, has meant a lot to us.

We wish you and your families a peaceful Christmas and a New Year filled with joy, health, and prosperity.

As a small gift, Chef David has created a special Christmas playlist just for you: 100 songs, carefully selected one by one. A little different from the usual, often traditional — very much like us at Bacaro.

Thank you for being part of our journey.
Warmest wishes,
Bacaro Staff 🎄🍷

Nowadays, unfortunately, online reputation can determine the fate of a restaurant, a shop, or a professional.
But do those who hold the reins of this system act with the necessary caution and respect?

For years, even in Italy, there has been debate about the need to verify the truthfulness and reliability of these contributions more effectively.
Then the bug happens.

A month ago, our restaurant received this review:

https://share.google/d5s79qL7QRT6qiLdV

The judgment is extremely harsh. Thankfully, there are photos—and that’s when we discover that they are not of our restaurant. Clearly, the customer, driven by a destructive and vindictive impulse, managed to review the wrong restaurant.

No big deal, we thought. We wrote to Google, confident that since the mistake was obvious, they would remove it.
No response.

So, after two weeks, Chef David personally contacted Google’s country manager in LinkedIn to report the incident. As expected, we were referred back to the team, who—after an exchange of emails and after we clearly demonstrated that the review did not refer to our restaurant—replied: “Unfortunately, we cannot remove it because it does not violate our standards.”

These, then, are the people who guide and influence customers, tastes, and your choices.
We are the ones who cook for you every day—and who must also find the time to have our work respected, sometimes in vain.

What people say

Bacaro Singapore, located on Greenwood Avenue, is not your typical wine bar or Italian restaurant. It offers a unique concept that goes beyond the traditional definition of a restaurant. With its authentic Italian cuisine and warm ambiance, Bacaro Singapore has garnered an impressive reputation among its patrons.

Recently, Bacaro Singapore celebrated a milestone on social media with 50 glowing Google reviews and an outstanding 92% 5-star rating. This achievement is a testament to the love and support from their customers, who continue to inspire the team at Bacaro Singapore every day. Being part of the Bacaro family is truly an honor for both staff and guests alike.

One of the highlights at Bacaro Singapore is their Carpaccio dish, which holds historical significance. Invented by Giuseppe Cipriani in the 1950s at his renowned restaurant, Harry's Bar in Venice, Carpaccio was created for Countess Amalia Nani Mocenigo who needed to avoid cooked meats. At Bacaro Singapore, you can savor the original recipe of this iconic dish.

When it comes to wine selection, Bacaro Singapore takes pride in offering Gess, a wine produced exclusively from the Gewürztraminer grape variety. The name "Gess" itself translates to "chalk" in Italian, symbolizing its connection to the land where it originates. The vineyards used for Gess were planted back in 1970 with careful attention given to each grape's selection and preservation. Hand-harvesting and fermentation in stainless steel containers ensure that only the best grapes are used in creating this exceptional wine.

At Bacaro Singapore, every detail matters when it comes to delivering an unforgettable dining experience. From their authentic Italian cuisine to their carefully curated wine selection, they strive to provide nothing but excellence. Whether you're looking for a cozy spot for a romantic dinner or a place to celebrate special occasions with friends and family, Bacaro Singapore is the perfect destination.
