Chestnut desserts usually show up thick, heavy, and ready to knock you out. But our Monte Bianco knows better.

A crisp pâte sucrée tart base holds a cloud of chestnut cream — whipped light, threaded with toffee, and finished with a sly pour of amaretto. Same winter warmth chestnuts are loved for, light on the fork, and suspiciously easy to polish off.
