Populus Brioche French Toast 🍞 + 🍌
We’ve always felt it’s different, as it’s a custardy brioche toast unlike the conventional dip and fry ones out there! We soak it deep in an egg custard mix, bake it for 10-12 mins to set. Think of it as a Panna Cotta meets French Toast!
Topped it off with Cereal, Hazelnut Feuilletine and Caramelized bananas with a big dollop of Greek yogurt for the full brunch experience.

The Populus Seafood Linguine, with Lobster Bisque.
Lobster shells, roasted to an almost char bringing out its umami, cooked down in to a stock with load full of aromatics and Roma tomatoes. Blitzed and blended before passing it through a fine mash sieve, it is the star of our Seafood Linguine.

Wagyu Beef Ragu Pappardelle, comforting and packed full of robust flavors, it’s one of the top requested for staff meal choice!
The broad and wide ribbon shaped pappardelle allows the ragu sauce to cling on to it, and makes it easy for slurping. To top things off, we use an egg & semolina base pasta for this, to allow the al dente effect to come through.
