Our US Rib Fingers Curry Mee Tai Mak returns this week, bringing back everything people love about it — a deeply aromatic curry broth, tender slow-cooked US rib fingers, springy tai mak, beef tendon, honeycomb tripe, beef balls, quail eggs, daikon, and our house fukujinzuke for brightness and crunch.
Rich, comforting, and packed with layers of flavor, it’s the kind of bowl that starts with “I’ll just have a taste” and ends with an empty bowl.

Four faces. Four generations. Four wines that tell the story of time.
On 22 May, Morsels welcomes Liuba Letorova from Bodegas Matsu for a special one-night-only wine dinner celebrating the soulful wines of Toro.
The Matsu labels are unlike any other. Each bottle bears the face of a different generation — from youth to old age — symbolizing how wisdom, resilience, and character deepen over time, much like the wines themselves.
At Morsels, Chef Petrina Loh translates this story onto the plate through a four-course menu rooted in fermentation, heritage, and bold Asian flavors.
✨ Hokkaido Scallop with almond dashi and fermented white asparagus
✨ Charred Pork Cheek with balsamic ang chow glaze and green mango
✨ Whisky-Brined Silverhill Irish Smoked Duck with charred cabbage and duck jus
✨ Braised 2GR Wagyu Bolar Blade with Morsels’ 2018 gochujang chocolate glaze

Kuruma ebi, reimagined — not just pristine, but layered, cured, and deeply expressive.
At Morsels, we cure our kuruma ebi in shio koji and kombu, coaxing out sweetness and umami before building it further — the heads transformed into a rich oil and stock, lifted with our 10-year aged kaffir lime vinegar. Bright, aromatic, and quietly powerful.
Topped with miso-marinated mirugai and finished with a crisp rose apple, cucumber, and seaweed pickled salad — a cold seafood soup that’s delicate yet deeply structured, every element intentional.

TAKA, Junmai Daiginjo Yamadabo by Heiwa Shuzo, Wakayama—crafted from the rare Yamadabo rice, the ancestral strain behind Yamada Nishiki. This is sake at its most thoughtful: soft, rounded, and deeply elegant.
Expect a gentle bloom of white peach, melon, and steamed rice sweetness, layered with a subtle umami core and a whisper of florals. The texture is silky, almost weightless, finishing clean with just enough depth to linger.
