Culina invites you to an evening dedicated to the art of tuna cutting, centred on a 100kg, 1.6-metre long bluefin tuna sourced from the nutrient-rich waters off Kochi Prefecture in Japan.
With 15 years of mastery in tuna cutting, chef Tomoya Sasakito demonstrates the technique and precision required to fillet the fish, a performance of skill and finesse using a katana-like blade.
Savour the fish’s buttery texture and rich, flavourful flesh presented in over 10 distinct preparations, including sashimi, sushi and ‘nakaochi’ — the soft flesh carefully scooped from between the bones. The evening continues with a multi-course menu by Culina’s chef Timothy de Souza and his culinary team.
