Pork belly cooked with spices and banana vinegar, then glazed with banana ketchup. This is inasal liempo from the Philippines.
The vinegar balances out the fat of the pork belly. Tanginess with a hint of banana. Delicious!!😋 It was so much fun making the banana vinegar and ketchup too!

Thanks to for your Jeju food posting September 2024. And so we went to Jihwan for seafood and abalone porridge. And it was FAB… smooth congee style porridge, max umami!
Amazing service items, banchan, mackerel sushi and fish tempura. We also orders grilled mackerel which was grill just right. Porridge was amazing! Big portion enough for 3 or 4.

Sharing some memorable eating places on this Jeju vacation in the following few posts. So much inspiration here for family meals and for intimatesuppers.
Our first meal after the red eye flight was Korean stews at Ujin Haejangguk. Hearty, flavourful meat stews, just what we needed. The Hubs had the beef one while I had the pork version. Thick gravy with shredded meat, mine was more herbaceous. Both good!

Test kitchen for one of our starters. This has origins from Philippines, and is called inasal liempo. Grilled pork with banana vinegar and banana ketchup which we (means The Hubs 😜) make ourselves.
We plan to cube the pork, and serve it with pickled papaya (I made the pickled papaya ok!)

Friday was our last dinner this season. So this weekend, with a little more free time, I tried a new recipe from new cookbook ‘Baking and the Meaning of Life’.
Green Tea and Red Bean Brownie
Moist, tender crumb! Enough green tea flavour without being overpowering, complementing the lightly sweet red beans. Detailed easy-to-follow recipe👍🏻

After a few test kitchen, this dessert wins the family approval!
Apom Berkuah
A traditional Peranakan Kueh made with fermented rice flour and coconut milk, served with a Gula Melaka and banana gravy😋😋. This used to be one of my favourite kuehs but It’s harder to find these days.
Recipe from Christopher Tan of . Detailed, easy to follow recipe that works. So many other kuehs I’d like to try from his book. Thank you Christopher for this jewel of a cookbook.

A dear regular guest of ours gifted us with this green papaya from her garden. Just in time for our test kitchen!
In our next menu, Archipelago, one of the starters will be a Filipino style grilled pork, using banana vinegar & banana ketchup that The Hubs made. Served with this papaya pickle.

Wanted a simple meal, with leftover rice, frozen sambal and some herbs from our garden. Nasi Ulam is a rice salad which can be as simple or as complex as you make it, but always satisfying!

Last weekend’s family dinner was a test kitchen tasting of 2 dishes.
Beef Buah Keluak on sourdough pancakes
Take 1. flavour was big, earthy, umami! Plating needs some adjustment.

This round we sous vide the duck breast. Same intense assam soy flavours, with the duck breast that’s pink and tender! Delish.

TEST KITCHEN
Last week The Hubs cooked Itek Shio, testing his version for our next menu The Archipelago. Slow braising the duck before pan frying it to caramelise the assam sauce that’s coating the duck. So delicious and would go so nicely with our Nasi Ulam too!
It was a resounding YES! from our official food tasters when we put it to the vote. .pkok .vshi . Just a few minor tweaks and we’re ready to go.

TEST KITCHEN
Last weekend The Hubs made his version of Itek Sio. This is duck braised in a soy sauce Assam-rich gravy. We pan fried it to caramelise the sugars just before serving it. Delish!!😋 Just a few tweaks needed and a 2nd trial.
Trying this out for our next menu The Archipelago, which will highlight dishes from Indonesia, Singapore and Malaysia.
A resounding YES when we put this to a vote!

This year our YuSheng looks so pretty with our Beetroot cured Salmon Gravlax in a rose arrangement. Served with homemade Passionfruit marmalade sauce, garlic oil, sesame oil. The gold crispies are homemade sourdough crackers.

To get to Seraya Crescent in Singapore, you can take the public transportation via MRT and bus. Take the Circle Line MRT to Paya Lebar station and transfer to bus number 24 towards Upper East Coast Road. Alight at Jalan Tanah Puteh Road and walk for about 8 minutes to reach Seraya Crescent.
If you are driving, take Tanah Merah Coast Road from the East Coast Parkway (ECP) and turn left onto Bedok Jetty Road. Continue straight until you see Seraya Crescent on your right. There are limited street parking spots available around the area.
