A testament to the humble yet remarkable power of prawn head frying is the irreplaceable depth of flavour our house made prawn bisque broth imparts to dishes like our Kueh Pie Tee, Pong Tauhu Soup and Chap Chye.
Prawn heads are lightly fried till their natural oils are released and a fragrant aroma fills the air. We then continue simmering it for hours till a golden elixir is produced and a robust, full-flavoured broth bursting with sweet, umami flavours is achieved.

Our signature High Tea at National Kitchen features a selection of sweet and savoury treats โ perfect for sharing and enjoying at your own pace, served with a pot of tea or something sparkling if you wish. To get to the restaurant located at Saint Andrew's Road in Singapore, one can take the MRT and alight at City Hall station. From there, exit towards National Gallery Singapore and cross the bridge to reach Saint Andrew's Road. The restaurant would be on the left side of the road.
Alternatively, if driving, one can park at National Gallery Singaporeโs basement carpark and take the lifts to Level 2 where the restaurant is located. However, do note that parking fees apply.
