In this edition, we invite you to go on a culinary journey through Chubu, the central part of Honshu spanning nine prefectures. The Japanese Alps divide the region between the Pacific coast to the south and the Sea of Japan to the north. This contrast between the temperate climate and snowy winters produces an extensive breadth of seasonal ingredients.
Savour highlights like Japanese sweet shrimp. sourced from the chilly coastal waters of Fukui Prefecture; and kinjiso spinach — native to Kanazawa in Ishikawa Prefecture — steeped in a dashi-infused broth.

Flavours of Japan, our signature dining series showcasing Japan’s rich culinary landscape, returns for one night only.
The first edition of 2026 takes you through Kansai, the southern-central part of Honshu. The region, made up of several prefectures like Osaka, Kyoto, and Hyogo, is defined by mountainous terrains, fertile plain fields, and vast seas, each distinct landscape yielding ingredients that are prized worldwide.
Savour regional specialities like young burdock from the eastern side of Yao City, grown near the foothills of surrounding mountains; and firefly squid, a seasonal spring catch from the northern town of Shin’onsen facing the Sea of Japan, steamed and served with miso vinegar to bring out its delicate sweetness.
