The Science of the "Sugar Spike" (And Why it Matters)
Have you ever wondered why you feel a "crash" or sudden tiredness 30 minutes after eating a standard dessert? It all comes down to the Glycemic Index (GI).
What is the Glycemic Index?
The GI is a rating system (from 0 to 100) that shows how quickly a food causes your blood sugar to rise.
High GI (70+): These foods (like white sugar or flour) digest rapidly, causing a sharp spike in blood glucose followed by a rapid drop. This can lead to insulin resistance over time and immediate "brain fog."
Low GI (55 or less): These foods are digested and absorbed more slowly. This results in a much slower, lower rise in blood sugar and, consequently, a more stable energy level.
Why Sugalight is Formulated Differently
Standard ice creams often hit a high GI because they rely on sucrose (table sugar) and high-fructose corn syrup.
To keep the GI low, we use Xylitol and Maltitol. These are polyols that have a significantly lower impact on blood glucose levels compared to sugar. This makes it possible for the body to process the treat without the metabolic "rollercoaster."
