Please note that the restaurant would be closed on the following days for the Lunar New Year:

Dinner on 9 February 2024, Friday
Lunch & Dinner on 10 February 2024, Saturday
Lunch & Dinner on 11 February 2024, Sunday

While we are closed for dinner on the 9th, we would be open for lunch, serving up a 5-Course Set Lunch Menu.

Operations will resume on Monday, 12 February, where we would also be serving up a 5-Course Set Lunch Menu.

Alaskan Black Cod | Sauerkraut

One of our signatures at Início is a miso-roasted Alaskan black cod served with a broth of “Choucroute”. Inspired by a traditional Alsatian dish of Choucroute, we made a broth infused with flavours of sauerkraut and smoky bacon.

Our “surf & turf” take on this dish elevates the classical dish with the inclusion of an umami-laden shiro miso marinated black cod, roasted and caramelised to perfection while maintaining a moist interior.

Our Signature Nori Focaccia.

Kickstart your meal at Início with our freshly-baked Focaccia roll infused with Japanese Seaweed.

In a 2-day process, we begin making our focaccia with a b**a. It is a pre-fermented bread starter that adds complexity to our bread, we also use it to achieve a lighter texture in our bread roll. We utilise two types of Japanese seaweeds in our dough to ensure that our focaccia is umami-packed full of flavour.

We serve ours with an unsalted Bordier Butter. Come down and join us for a meal, to enjoy our signature creation today!

Seamless Teamwork | Chef-Owner Marcus and Head Chef Ian at the pass working in synergy to plate up the last dishes of 2023.

As we wrap up the last service of the year, we reflect on the past month of our operations and can’t help but express our deepest gratitude to everyone who has supported us in every way possible.

Moving into the new year, we look forward to exciting times ahead of us. Here’s to creating more delectable dining experiences and memorable moments with us!

Norwegian King Salmon “Croustillant” | Vermouth

A favourite in our set lunch menu for the past two weeks. Fresh Norwegian King salmon wrapped in Feuille de Brick and deep fried. Served rare, it is refreshed with citrus and espelette, and served with a vermouth emulsion finished with freshly chopped dill.

As our set lunch menu is changed regularly to keep things refreshing for our guests, we are excited to announce that we would be launching a brand new set lunch menu starting next week!

Last but not least, let’s meet Início’s Sous Chef Zachariah Chow.!

Growing up, Chef Zachariah spent a year in junior college but decided that it was not for him. What he wanted to do became clearer and he decided to make the pivotal decision to quit and pursue his first love – food. He pursued a diploma at Temasek Polytechnic’s Culinary and Catering Management course where he was presented with the opportunity of a stint at Michelin-starred Iggy’s. It was at Iggy’s that he found his calling for fine dining and that set the precedence for his culinary career. Chef Zachariah then pursued a bachelor’s degree at the prestigious Culinary Institute of America, gaining experiences at one Michelin-starred Restaurant Nouri and three Michelin-starred Odette along the way. Upon graduation, he took up a Chef de Partie position at one Michelin-starred Ma Cuisine where he first met Chef Marcus in 2021. Most recently, Chef Zachariah was a Chef de Partie at world-renowned Chef Thomas Keller’s three Michelin-starred The French Laundry restaurant in Yountville, California.

In an effort to expand his culinary landscape, Chef Zachariah actively participated in culinary competitions and has consistently demonstrated his prowess on the competitive stage. In 2017, he took home the title of Singapore’s Top Young Chef, achieving Best Appetiser and Main Course, as well as Best Media Menu. He subsequently joined the Singapore National Culinary Team as team assistant for the “Expogast” Culinary World Cup 2018, where the team achieved an overall second place.

Being back in Singapore at Restaurant Início, he works closely with Marcus to develop the Research & Development program, bringing home his experiences at working with seasonality, techniques and innovation elevate the restaurant’s cuisine.

A perennial favourite among our guests - our signature Início “Bouillabaisse”.

A traditional Provençal fish stew originating in the port city of Marseille in France, it was originally made by Marseille fishermen using leftover or undesirable bony rockfish and shellfish.

Chef Marcus was first introduced to this dish during an internship stint in Lyon, France at the hands of the prestigious Institut Paul Bocuse culinary academy. Being a seafood lover himself, it was love at first bite and he immediately fell in love with this dish.

Inspired by this classical “peasant” dish, Chef Marcus recreated and elevated this dish with the use of the freshest premium seafood and his unique injections of regional spice mixes. Our Início “Bouillabaisse” features New Caledonian Obsiblue prawns, tender Patagonian baby squid, XL Hokkaido scallops and French sea bream, accompanied with a decadent rouille spiced with our homemade Thai red curry paste.

A rich and aromatic seafood broth aromatised with saffron and Pastis is poured tableside.

Alternatively, you can drive along the AYE and take the exit toward Jalan Bukit Merah/Leng Kee Road. There are parking facilities available along Leng Kee Road for those driving.
