“No dalcha? No curry?” 😅
We see this comment a lot, and we get it, it might not be what you’re used to.
We come in peace but after 20 years of making biryani, we’ve learned that not every biryani has to be served the same way. Chef Boss Arif’s philosophy is simple: if the rice needs dalcha to taste good, then the flavour isn’t in the rice.
Our dum biryani is cooked, in our opinion, the traditional way, with the rice, meat and masala all cooked together so every grain carries flavour. Adding dalcha changes the flavour profile completely, which is why we choose to serve it on its own (though a side of raita is always a good idea 😉).
Of course, taste is personal. It’s okay if we’re not your cup of tea. But if you’ve never tried biryani this way before, don’t you think it’d be fun to try something different?

Meet Azan. According to him, he joined the family business because he “had no choice” when he graduated university during Covid and the aerospace industry came to a standstill.
We’re still not entirely sure if he’s joking. 😆
Working with family is a blessing, but it definitely comes with its challenges. There are disagreements, long days, and moments where work conversations somehow make their way into family dinners.
Still, we’re grateful that we’re building this business together.
Today, he’s overseeing the packing of 300 bento boxes headed out for a corporate order.

Planning a trip to Flower Market or Botero: A Life in Fullness? We popped by today and thought we’d share a few things we wish we’d known beforehand. Save this for your Gardens by the Bay day out, or send it to the friend you’re trying to convince to go with you.
🌸 IMBA Theatre regularly updates their Instagram Stories with current wait times for Flower Market. Pre-booking is no longer available, but walk-ins still are.
🎨 Botero tickets are currently 1-for-1 until 14 June (do check the terms as this may be for Singaporeans only). The immersive show runs hourly from 10am to 6pm and starts 10 minutes after entry, so try to arrive on time. It’s narrated by Botero’s eldest son and gives a lovely introduction to his life and work.
🍛 If you’re looking for a meal before or after, our 9-time Michelin Bib Gourmand biryani is just a scenic 9-minute walk from IMBA Theatre at Jurassic Nest Food Hall. Bonus: it’s air-conditioned.
☂️ The queue for CJ Hendry is sheltered, which is a small blessing in Singapore weather.

Over 20 years of making, improving, serving and, of course, eating biryani, and we still find every excuse to gather around a plate of it.
The memories we’ve made over biryani are some of our favourite ones. Weddings, birthdays, graduations, family gatherings, and countless moments in between.
Maybe we’re biased, but we truly believe biryani is that dish. The one that brings everyone to the table, no matter the occasion.

20 years on, and we’re still keeping it all in the family.
One thing we hear all the time is:
“The original owner sold the business, right?” Or “Must be new management now.”
But the truth is, we’re still here.
From Mum and Dad starting Bismillah Biryani over 20 years ago, to my brother and I joining the business, it’s always been a family affair.
We’ve spent years sharing our food, but maybe it’s time we shared a little more about the people behind it too.
So if you’ve ever wondered how Bismillah Biryani came to be, what it’s like working with family, or how things are going behind the scenes today, let us know.
