In this picture, they have been matured for five weeks and have a beautiful blue coating on the rind. It gives the cheese a delicious nutty taste!

At la Ferme du Bois-Joli, cows are brought to these beautiful fields 6 months per year, between Spring and Autumn. Now in Mid-September they are already back at the farm to get ready for winter!
